Why Brisbane pubs are hard on beer systems

A Brisbane keg cellar has to run at 2–4°C while sitting inside a building where the ambient regularly hits 34°C in summer. That's a 30°C temperature difference across the cool room wall, on top of every keg swap opening the door for a minute at a time. Add a Python beer trunk running 20m from cellar to bar, and you have four separate places the pour can warm up before it hits the glass.

Cellar cooling: direct-draw vs glycol

The single biggest design decision for a Brisbane pub is direct-draw versus glycol dispense:

  • Direct-draw — keg-to-tap run under 3m, insulated. Cheapest to install. Only viable when the bar sits directly above or beside the cellar.
  • Glycol — chilled propylene glycol circulated alongside the beer lines inside an insulated Python. Handles runs to 60m, keeps beer at 2°C from cellar to font. Essential for any bar that's more than 3m from the cellar or has multiple bars off a single cellar.

We size the glycol chiller for peak Brisbane summer load, plus 20% headroom, and locate the heat-rejection condenser outside the building — never in the cellar itself. Bad glycol design is the number-one reason Brisbane pubs pour foam on a busy night.
