- Fresh-meat holding cool room
0–2°C, 85–90% RH, hanging rails and shelving. Sized to 2 days of stock plus 20% headroom.
- Freezer room
-18 to -22°C for portioned freezer stock, offcuts and slow-moving lines.
- Processing-room split system
Dedicated 18–35°C ambient control on the boning area — keeps carcass temperature under HACCP.
Dry ageing: rooms vs cabinets
Dry ageing pulls moisture out of primal cuts over 28–42+ days, concentrating flavour and tenderising through natural enzymatic action. It only works with tight environmental control:
- Walk-in ageing room — 1–3°C, 80–85% RH, low airflow (under 0.5 m/s), UV lamp for surface control. Ideal for high-volume premium retail.
- Self-contained ageing cabinet — glass-front, cellared humidity control, smaller capacity. Great for boutique butchers and shopfront display.

Common butcher refrigeration problems we fix
