TL;DR — Seafood spoils faster than any other retail food category, especially in Brisbane's climate. The cold-chain answer is a combination: ice-bed serve-over displays out front, a dedicated seafood cool room with proper drainage out back, an onsite flake-ice machine, and a brine chiller for prep. Hart Air specifies, installs and services all of the above.

The seafood cold chain
- Ice-bed serve-over display
Whole fish and fillets on flake ice at 0 to -1°C, drainage to a trapped floor waste, glass sneeze guard and LED spotlighting.
- Seafood cool room
0–2°C dedicated for seafood only — no cross-contamination with other product. Stainless-lined for wet work.
- Flake ice machine
Onsite production of flake or nugget ice — 60 kg/day for boutique shops, 300+ kg/day for wholesale-plus-retail.
- Brine chiller
-2 to -4°C brine for rapid prep-chilling of fillets and portions without freezing.
- Rapid pull-down freezer
Blast freezer at -35°C for freezing at-catch product or freezing IQF portions.
- Live tank cooling
Chilled recirculating systems for live crab, lobster and mud crab tanks.
Why Brisbane is tough on seafood
Warm ambient, humid air and the sub-tropical fish-market rhythm all conspire against a Brisbane seafood retailer. Practical implications for the equipment spec:
- Ice-bed displays melt roughly 25–35% faster in Brisbane than in Melbourne or Sydney — size the ice machine accordingly.
- Seafood cool rooms need higher air throw and tighter temperature control to hold fish at 0°C on the ice.
- Drainage is critical — every wet surface needs a trapped floor waste with a grease/scale trap.
- Stainless fit-out on floors, splashbacks and cool-room panels — GRP or aluminium won't survive the salt water and cleaning chemistry long-term.
Compliance: FSANZ, seafood-specific
Brisbane City Council audits seafood retailers under FSANZ Standard 3.2.2 with additional attention to species labelling, traceability and the more stringent temperature control required for high-risk seafood products (raw molluscan shellfish, sashimi-grade product). Hart Air's contribution:
- Calibrated data loggers on every cool room, display and freezer.
- Weekly probe-check templates and annual calibration certificates.
- ARCtick licence AU38437 on every refrigerant handling job — see the HACCP & FSANZ compliance guide.
Common seafood refrigeration problems we fix
- Ice-bed melting too fast. Undersized ice machine, cool room air throw poor, cabinet not shaded from direct sun.
- Cool room climbing above 3°C. Door gaskets, condenser fouled, refrigerant under-charge — all common in salt/humidity environments.
- Flake ice production dropping. Scaled evaporator drum, feed-water pressure or condenser fouling.
- Brine chiller unable to hold -2°C. Fouled condenser, refrigerant loss or under-spec'd compressor for Brisbane ambient.
- Drainage backing up. Trap/grease-arrestor blocked — needs regular plumbing service alongside refrigeration PM.
